This is a recipe we make year-round in our household. It’s an easy way to get the sweet & tangy taste of barbecue without having to fire up the grill.
What goes in Crockpot BBQ Pork?
On the recipe itself, we’ll break the ingredients down into two groups: what goes in the sauce, & what goes in the the pork. Here is a short list of what you’ll need to make this sweet and tangy pork:
- Pork
- BBQ Sauce
- Chicken Broth
- Worcestershire Sauce
- Brown Sugar
- Minced Garlic
- Paprika
- Chili Powder
- Garlic Powder
- Salt
- Pepper

Equipment
- Slow Cooker / Crockpot
- Crockpot Liners (optional)
Ingredients
The Sauce
- 2 cups Sweet Baby Ray's BBQ Sauce I used the original flavor
- ½ cup Chicken Broth
- ¼ tsp Worcestershire Sauce I used 4 dashes, about this much
- 2 tbsp Brown Sugar
- 1 tbsp Minced Garlic
- ¼ tsp Paprika
- ¼ tsp Chili Powder
- ¼ tsp Salt
- ¼ tsp Pepper
The Pork
- 2-3 pounds Pork see notes below for what cuts to use
- ½ tsp Salt Sprinkled over the meat, to taste
- ½ tsp Pepper Sprinkled over the meat, to taste
- ½ tsp Garlic Powder Sprinkled over the meat, to taste
Instructions
- Put your crockpot liner in your crockpot (liner is optional, but advised), & turn the crockpot on low.
- Mix together all ingredients for the sauce in a bowl. Spread a very thin layer of the sauce evenly in the bottom of your crockpot. This should be just enough to put a thin layer of sauce between the bottom of the crockpot & the pork.
- Lightly season one (or both, if desired) side(s)s of your pork by sprinkling salt, pepper, & garlic powder over the meat. Place the pork in the bottom of the crockpotNOTE: If layering the meat (stacking it on top of each other), be sure to spread some sauce between the layers!
- Pour the rest of the sauce over the top of the pork, & spread evenly.
- Let the meat cook covered on low for 6-8 hours for thinner cuts of pork, or 8 hours if you're using a pork butt / thicker cut of meat. Use a meat thermometer to ensure that the internal temp is 200-205℉.For thinner cuts, when done you can go ahead and serve.For pork butt, remove the meat from the crockpot when done shred the meat. Return to crockpot, and coat with sauce. You can either serve immediately or let it simmer in the sauce.

Crockpot Liners
- These are definitely optional – HOWEVER: if you don’t use them, you’re gonna be stuck with a sticky mess to cleanup, & you’ll wish you had.
The Pork
- For the best shredded pork: Use a pork butt
- For thicker chunks of fall off the bone pork: Use medium / thick pork steaks, or uncured ham steaks
- What I often use: I use 2-2.5 pounds of uncured ham steaks that are about 1/2 inch thick.
- Please note that this is NOT the same type of ham steak you typically get at the store! We get all of our pork & beef from local farmers, so this cut comes uncured, & tastes almost just like a pork chop.
How Long to Cook
- If using uncured ham steaks or pork steaks: Since we’re cooking on low, I recommend at least 6 hours for these thinner cuts to get the meat nice & tender.
- You can cook up to 8 hours on low, & if you want to break up the meat a bit it & let it simmer some more in the sauce, it should start coming apart by 6 hours to 7 hours.
- I cooked mine for 7 hours, & it came out PERFECT 👌 But if you’re using thicker cuts of meat, keep in mind that you’ll probably need to cook it a bit longer.
- If using a pork butt: You’ll want to cook on low for about 8 hours. Since this is a thicker cut of meat, use a meat thermometer to ensure that the internal temperature reaches 200-205 degrees Fahrenheit.
This recipe is a good option for how to cook uncured ham steaks in the slow cooker
Because our family buys our meat in bulk from a local farmer, we end up with some cuts of meat that we have to get creative with.
This Crockpot BBQ Pork Recipe has been perfect to use up some of our uncured ham steaks. While using pork butt is the better cut for pulled pork, the ham steaks are a great cut for fork tender thicker pieces of pork.
