This Keto Taco Soup recipe is rich, hearty, & SO flavorful!
As I write this, it’s soup season here in the Midwest, & I’m all about it! When the temps are maxing out somewhere between the 20’s and the 50’s everyday, we all want something that’s going to warm us up.
Not only does Keto Taco Soup have that spicy kick you’ve been looking for, but it’s also hearty & filling with plenty of low carb veggies.
Ready to get your taco fix without the extra carbs? This recipe will take you less than an hour (if you’re not a 🐢 ) to whip up!
How many carbs are in Keto Taco Soup?
The net carbs per serving in Keto Taco Soup is about 14.8 net carbs IF you’re using taco seasoning packets. If you are making your own seasoning, the carbs will typically less, but it does depend on the ingredients you are using.
Keto Taco Soup
Equipment
- Stock Pot or Soup Pot
- Pan
Ingredients
- 2-3 pounds Ground Beef * See notes below for additional recipe info
- 2 tbsp Olive Oil
- 1 Diced Onion
- 2-3 tbsp Minced Garlic
- 1 Bell Pepper (Diced) Orange, Red, or Yellow
- 1 bag Frozen Riced Cauliflower
- 1 can Rotel 10 oz can
- 1.5 blocks Cream Cheese (softened) blocks are 8 oz
- 1 box Beef Broth 32 oz
- ½ cup Heavy Whipping Cream
Seasonings
- 6 tbsp Taco Seasoning homemade is preferred – see notes
- 1 tsp Chili Powder
- 1 tsp Cumin
- ¼ tsp Paprika
- ½ tsp Garlic Powder
- ¼ Salt At least this much, then to taste
- ¼ Pepper At least this much, then to taste
Instructions
- Heat your frozen cauliflower rice in the microwave (per instructions on the bag – different brands will have different instructions).
- While the cauli rice is in the microwave, start to brown your ground beef in a pan, and sprinkle on the salt, pepper, & garlic powder.
- While your ground beef is cooking, put your stock pot / soup pot on another burner & pour in your olive oil, with your burner on medium heat.
- When the oil is warm to hot, add the minced garlic & stir it in the oil. Let cook about a minute, then add the onions, bell pepper, cauliflower rice, & undrained can of Rotel. Stir & let cook for another couple of minutes, stirring often.
- Add the softened cream cheese & stir the mixture well.
- Add the beef broth, heavy whipping cream, taco seasoning, chili powder, cumin, (drained & browned) ground beef, & the paprika. Stir well.
- Continue cooking uncovered for 20-25 minutes on low to medium heat, stirring about every 2-4 minutes.
- Dish out into bowls & serve! Top with shredded cheddar or Mexican cheese, and sour cream if desired.

Keto Taco Soup Recipe Notes
Ground Beef
- Use at least 2 pounds, but if you’d rather have a meatier soup, use 2.5-3 pounds
Taco Seasoning
- If you’re going strict keto, you will want to make your own seasoning – taco seasoning packets usually contain non-keto ingredients such as maltodextrin. AND the carb count is higher.
- If you need taco seasoning (& aren’t being strict on keto) order this Ortega Taco Seasoning from Amazon!
- Not all taco seasonings are created equal, so if you need more taco flavor feel free to add some more! I’d recommend adding 1-2 teaspoons at a time & taste-testing until you get the flavor you want.
- If not using seasoning packets, there are about 3 tablespoons of seasoning per seasoning packet, for reference
Minced Garlic
- For me, garlic is life – but if you’re not big on garlic, feel free to dial it back some!
Salt & Pepper
- I always operate with the under-salt instead of over-salt mentality (same with pepper). So if you’d like more salt & pepper flavor, toss it in!
Bell Peppers
- Use orange, yellow or red – whichever you prefer (but not green)
- If your peppers are medium in size, you might want to use two!
