There are about a million ways to use shredded chicken, so with this one little recipe, you can be making ALL KINDS of different chicken recipes. No brainer, right?
You only need a few ingredients (which you already have in your kitchen – or, at least, you should) so it’s easy peasy, lemon squeezy.
You can dress it up any way you like: BBQ Sauce, Buffalo Sauce, Cheese, Rice / Cauliflower Rice, add it to a dip – the sky’s the limit! See the list below this recipe for all kinds of ideas 😉
Alrighty then, let’s get ready to toss some chicken in the Instant Pot!
Easy Instant Pot Shredded Chicken
Equipment
- Instant Pot
- Forks (or other utensils to shred)
Ingredients
- 1 Cup Chicken Broth (You can substitute water if you don't have broth)
- 3 Medium to Large Boneless Skinless Chicken Breasts
- ¼ tsp Salt To Taste
- ¼ tsp Pepper To Taste
- ¼ tsp Other desired seasoning (Optional) I.e., Italian seasoning, Garlic Powder, Chicken seasoning, other
Instructions
- Pour 1 cup of chicken broth into the Instant Pot. NOTE: You can do this with or without the trivet – I prefer mine with, but that is up to you!
- Season the bottom sides of your chicken breasts with salt, pepper and (optional) other desired seasoning(s), then transfer them to the Instant Pot with the top side up, and season the top side as well.
- Put lid on Instant Pot, and turn valve to sealed. Select Manual or Pressure Cook, high pressure for 10 minutes. NOTE: Allow for the time for the Instant Pot to come to pressure – about 10 minutes.
- Once it comes to pressure, the timer will start. Once the timer winds down and beeps, let it sit for at least 10 minutes. The longer you let it natural release, the better.
- Open, and remove the chicken breasts and shred with forks (or other utensils). You can use the chicken for recipes, meal prep, or as a main entrée. I like mine with Sweet Baby Ray's Barbeque Sauce or Buffalo Sauce!Enjoy!NOTE: If storing or freezing, mix the chicken back in with about half of the liquid leftover from cooking to keep it from drying out.
