Alfredo sauce never seems to taste as good out of a store bought jar as it does at a restaurant. The store bought stuff also usually contains a lot of extra ingredients & preservatives that we don’t want or need.
That’s why I like making my own Alfredo sauce from scratch at home. It is a lot easier than you would think, and it tastes SO much better than store bought sauce!
Is Alfredo Sauce Low Carb?
Surprisingly, this sauce is on the low carb friendly side. However, you should be aware that fettuccine noodles are NOT low carb friendly.
Be sure to read my recipe notes for what I use instead of traditional fettuccine noodles.
Even if you don’t care about carbs – is this sauce still good?
Truthfully, I made this Alfredo sauce without keto or the low carb diet in mind at all. All I was thinking about was flavor.
So, yes – this sauce is REALLY good!

Creamy Chicken Alfredo Sauce Recipe
Ingredients
- 1½ lbs Boneless Skinless Chicken Thighs Cubed in bite size pieces
- 2 Cups Heavy Whipping Cream
- 5 oz. Parmesan Cheese fresh shredded
- 2 tbsp Butter
- ¼ cup Chicken Broth
- 2 tbsp Avocado Oil or oil of choice
- 2 Cloves Garlic minced
- ½ tsp Italian Seasoning
- ½ tsp Salt
- ¼ tsp Ground Black Pepper
- 1 bag Frozen Broccoli cooked (broccoli is optional)
Instructions
- Season your chicken with salt, pepper, & Italian seasoning .Place a medium to large saucepan or skillet over medium heat. Once the pan is hot enough, add your avocado oil. Then carefully add your chicken to the pan.
- Cook for about 14-16 minutes, flipping once or twice. Use a meat thermometer to ensure the chicken is cooked to 165℉.NOTE: Times may vary by appliance, so please use a meat thermometer to make sure your chicken is cooked to the proper temperature.
- When the chicken is done, remove from heat and set aside on a plate. Then add just enough chicken broth to barely cover the bottom of the pan (¼ cup or less), and use a wooden or silicon spoon to deglaze the bottom of the pan. Be sure to get up the sticky bits from the bottom.
- Add in your butter. Once it's melted, add the minced garlic, and stir for about 30 seconds (until the garlic becomes fragrant – don't cook it too long or it may burn).
- Pour the heavy whipping cream into the pan, and whisk evenly until it begins to boil. Then reduce heat, and continue whisking as it simmers. The sauce will begin to thicken after 5-10 minutes. Once it thickens well, add in your parmesan cheese & whisk welll.TIP: Taste your sauce. If you'd like more seasonings added, add a small amount of salt, pepper, &/or Italian seasoning to the sauce to taste.
- Re-add your chicken to the pan, and your cooked broccoli (if desired). Stir to mix well, and remove from heat.
- Serve over your favorite fettuccine noodles, or roasted spaghetti squash.
Recipe Tips for Making Alfredo Sauce
These are my quick tips for making this rich & creamy Alfredo sauce:
Heavy Whipping Cream: You can use a little less if you’d like your sauce to be a bit thicker. But the consistency (in my opinion) was just right with 2 cups.
Parmesan Cheese: I used fresh shredded parmesan from the store – it came in a 5 ounce container, so that’s how much I used. You can definitely add more cheese if you want!
Butter: Use real butter, please. Kerrygold brand if you’re fancy, Aldi Irish Butter if you want pretty much the same thing for less money. Real butter is going to give this sauce a more full-bodied taste, whereas your butter substitutes are going to be sorely lacking in the taste department. Also, butter substitutes like margarine are terrible for you. Stop using them.
Garlic: I get fresh garlic from a local farmer, and peel and mince it myself. It tastes so much better than store bought minced garlic, and it’s better quality.
Avocado Oil: You can use avocado, or olive oil for this – whichever you prefer.
Seasonings: As I mentioned in the recipe, you can use more or less to taste. Starting with the seasonings on the chicken amped up the flavor, and adding a little bit more toward the end really sent it home.
Optional Add-ins: The chicken and the broccoli are optional. I prefer my Alfredo sauce with chicken & broccoli, but if you don’t it’s fine to leave it out. You can start with Step 4 after preheating your pan, and add the seasonings straight to the sauce that you would’ve added to the chicken. It will still turn out amazing.
What noodles go with Alfredo Sauce?
Traditionally, you serve your Alfredo sauce over a bed of fettuccine noodles.
However, if you’re going low carb, cooked spaghetti squash is a great low carb option for this. I served mine with roasted spaghetti squash, and it was really rich and flavorful!
