This Cheesy Broccoli Bacon Bake is the perfect side dish to go with just about anything. We make it about once a week in our household. And if we’re asked to bring a side dish to a friend’s house, this is one that commonly gets requested.
It’s a VERY cheesy dish, and packs in some more flavor with bacon, so it’s always a hit with everyone.
Are there too many calories in it? Probably, but who cares – it’s got broccoli & cauliflower, so you’re getting a healthy dose of veggies at least.
You can deal with the extra calories for this cheesy masterpiece. 🧀

Cheesy Broccoli Bacon Bake
Equipment
- 9×13 Baking Dish or Foil Pan
- Medium Sized Microwavable Bowl
Ingredients
- 2 bags Frozen Broccoli
- 2 bags Frozen Cauliflower (optional – can use all broccoli if you'd like!)
- 2 blocks Cream Cheese 8 oz. blocks
- 3 tbsp Butter
- 3-4 cups Shredded Cheddar Cheese
- 1 bag Real Bacon Pieces / Bacon Bits 2.5 oz. or more
- 1 Ranch Seasoning Packet (see notes below about additional packet)
- ½ tsp Garlic Salt To taste
- ½ tsp Pepper To taste
Instructions
- Preheat oven to 400°F. Microwave the frozen broccoli & cauliflower about 10-12 minutes (until steamed / no longer frozen).Note: I put all 4 bags in the microwave together & the 10-12 minutes was enough.
- Place both blocks of cream cheese & the butter in your microwavable bowl, and heat for 45 seconds in the microwave. Carefully remove & stir the mixture, then microwave another 45 seconds & stir again. Microwave again if mixture isn't softened – otherwise move to next step.
- Add 2-3 cups of shredded cheddar cheese, the ranch packet, and half your bag of bacon bits to the mixture & stir well.
- Drain any excess water from your steamed broccoli & cauliflower (careful – the bags will be hot) & then combine them with the cheese / bacon / ranch mixture, and mix well. Spread evenly in your baking dish or pan.
- Sprinkle the rest of your bacon bits evenly over the top of your mixture, and then sprinkle the top with some garlic salt and pepper.
- Bake for 35 minutes. After 35 minutes, pull out the dish & top evenly with about ½ to 1 cup of shredded cheddar cheese.
- Return the dish to the oven, & broil for 3-5 minutes a 500°F until the top is golden brown.
- When the cheese is golden brown, remove & let cool several minutes before serving.

Recipe Notes – Cheesy Broccoli Cauliflower Bacon Bake
Cheese: The lower measurement when I say things like “2-3 cups” is for the normal folk. The higher measurement is for cheese addicts (like me) who enjoy eating it straight out of the bag 🤷♀️
Ranch: If you’re like me & you LOVE ranch, you can add a second seasoning packet. BUT – be forewarned that those ranch packets do have some extra carbs & sugars lurking in them. I, personally, would rather smother this thing in ranch seasoning, but it’s up to you!
- IMPORTANT NOTE: This recipe is NOT strict keto-friendly due to the ranch packets. HOWEVER. If you have your own dry ranch recipe that IS keto-friendly, feel free to use that instead!
Garlic Salt, & Pepper: When I say “sprinkle” it on – it’s exactly how it sounds. Don’t go using a tablespoon of each seasoning…unless that’s your preference.
Broiling: Keep a close eye on anything that’s broiling. Cheese can look normal at 3 minutes & then look like Anakin Skywalker by minute 4 🔥😅
Cauliflower: If you’re not a huge fan of cauliflower, feel free to use all broccoli instead! Just substitute 2 more bags of broccoli instead of the cauliflower.
*BTW*: I should mention that if you’re going meatless or don’t like bacon, you can leave it out & it will still taste amazing.
