Let me preface this recipe by saying even if you’re NOT looking for Low Carb or Keto recipes – DO NOT SLEEP on this Broccoli Cheddar Bacon Soup Recipe. It is straight fire 🔥
This recipe is fairly easy to make, and should only take you about an hour and fifteen minutes to an hour & a half from start to finish. This soup is PERFECT for those chilly fall & winter nights when you’re looking for something hearty & filling to warm you up!
Bonus points that it’s a stovetop recipe, so you won’t have to wait around all day for it!
Broccoli, Cheddar, Bacon, and what else?
You may have the ingredients in your fridge already, so there’s nothing stopping you from cooking this up for the fam tonight- here’s a quick rundown of what you’ll need:
- Broccoli
- Shredded Cheddar Cheese
- Bacon
- Onion
- Minced Garlic
- Chicken Broth
- Heavy Whipping Cream
- Butter
- Cream Cheese
- Salt
- Pepper
Yep…that is it, folks. That is truly all you need to make this BOMB soup!
Broccoli Cheddar Bacon Soup Recipe
Equipment
- 1 Soup Pot
Ingredients
- 4 Heads Fresh Broccoli, medium to large Chopped
- 1 lb Bacon Cut into smaller pieces (about ½ in. thick)
- 3-4 Cups Shredded Cheddar Cheese
- 1 Onion Diced
- 6 Cups Chicken Broth
- 3 Cups Heavy Whipping Cream
- 1 tbsp Minced Garlic
- 5 tbsp Butter
- 1 Block Cream Cheese Softened & cut into cubes, 8 oz.
- ½ tsp Salt to start – season to taste
- ½ tsp Pepper to start – season to taste
Instructions
- Toss your bacon pieces in the pot, & fry over medium heat until done. Remove the bacon & set aside on a plate lined with paper towels, & drain off some (but not all) of the bacon grease. NOTE: Keep enough grease to cook your onions in.
- Add your diced onion to the pot & cook for 2-4 minutes, until the onions are softened.
- Add the minced garlic & butter to the pot, & stir well. Then add your chicken broth, heavy whipping cream, cream cheese, salt, pepper, & chopped broccoli.
- When the soup begins to boil, drop the heat to Low & let it simmer for about 20-25 minutes.
- When done simmering, add your shredded cheddar cheese to the pot and stir well to melt the cheese.
- Remove from heat, serve with more shredded cheese on top if desired, & enjoy!

Recipe Notes – Broccoli Cheddar Bacon Soup
The Broccoli
- I usually cut most of the stalk off, and break off or chop the broccoli into medium sized pieces
Bacon
- I typically use thick cut bacon, but you can use thick or thin cut
- Be sure to keep some of the bacon grease to cook your onions in 😉
Cheese
- I always use shredded cheddar, and usually stick with sharp cheddar. You can also use mild too, if you’d like!
- My go-to brands: Aldi or Schnucks brand cheese. Nothing fancy here.
Butter
- I recommend using a real butter such as Kerrygold (Aldi has their own version of Irish butter that’s just as good, in my opinion!).
Garlic
- I often use fresh garlic & mince it myself. If you use fresh, you may want to use about 1/2 a tablespoon, or only do 2-3 small to medium cloves. Otherwise, the garlic may become overpowering.
Salt & Pepper
- I start with a smaller amount, & then usually just add more to my liking in my bowl when I dish it out. Everyone has different preferences, and you can always add more salt & pepper after the fact
- Remember this: you can always add more, but once it’s in the pot you can’t take it back. Salt & Pepper at your own risk 😂

- Nope, you don’t! Just be sure to save & add some of that bacon grease to cook your onions in

Thank you for the recipe. Broccoli cheddar soup is my favorite fall comfort food. I can say that the heavy whipping cream is a MUST, I tried using half and half to save money, and it was very thin.
